Mounce's book (can't remember what it's called, but the name is self-evident) is practically a complete teach yourself guide. Comes with a CD and access to a website with lectures. Way better than the book we used in college!
This is the rewrite of the classic Wenham by Jeremy Duff (THE college textbook when I did NT Greek 20 years ago, which has everything you need and has supplementary materials like a C.D. and dictionary: http://www.amazon.co.uk/gp/reader/0521755514/ref=sib_dp_pt#reader-pageon
before you buy, Rachel, does your seminary programme (not sure exactly where you are in relation to starting) offer any advice? I'm sure you could ask them and get something that would dovetail with the course you hope to do. One thing to watch out for: US grammars print noun declensions in a different order from English ones, and learning one can make it hard to switch to the other.
